Ingredients:
Crust:
2 cups dates
½ cup pitted and soaked date
½ cup soak spring water from dates
Filling:
½ cup spring water
½cup agave nectar
2 tbsp. cacao powder
2 tbsp. coconut oil
1 tbsp. lucuma
1 tbsp. maca
1 tbsp. mesquite
1 tsp. vanilla powder
Topping:
2 quarts strawberries
2 kiwis
2 pears
1 orange
1 cup blueberries

To prepare the crust:
Process all ingredients in a food processor until ground to your
desired consistency. You may grind until coarse, medium , or fine.
Naoko likes to leave the dates and almonds relatively coarse so as
to provide a nice textural contrast with the topping. Make a layer
with the processed ingredients in a pie plate or tart plate with the
separate bottom piece. Set aside.

To prepare the filling:
Blend all ingredients in a high powered blender on high for 45
seconds until thoroughly smooth and creamy. Spoon out into the
pie plate on top of the crust. You may fill in up to the same level as
the crust, or if using a deep pie plate, you may fill to half the level
as the crust. Set aside.

To prepare the topping:
Chop the fruit to your desired size. Don’t chop the blueberries. You
may also leave whole pieces of strawberries. Arrange the fruit on
top of the filling in a creative design of your choice. You are
finished! Enjoy immediately or store in the refrigerator and enjoy
later.
